Mango Chilli Prawn Salad

For this bright and flavorful prawn infused recipe we partnered with Lauren (@foodworthcelebrating) who created something that anyone can make, whether it be for yourself or a lunch in with friends!

Ingredients

  • 200g uncooked prawns, peeled
  • 1/4 cup @picosauces Mango Chilli sauce
  • 300g rice noodles, cooked

Dressing: 

  • 1 tbsp olive oil
  • 1 tbsp Mango Chilli sauce
  • 2 tbsp light soy sauce
  • Juice from half a lime

 Salad toppings:

  • Carrot, about 3 inches, sliced finely
  • Cucumber, about 3 inches, sliced finely
  • 1/2 mango, sliced
  • Handful coriander leaves
  • 1 spring onion, sliced finely 

 

Method

  • Marinate the prawns in the Mango Chilli sauce and set aside
  • Prepare the rice noodles, dressing and salad toppings
  • Fry the prawns for 2-3 minutes on each side in some olive oil until firm
  • To make the salad, add a base of rice noodles, top with the salad toppings and prawns and pour over the dressing
