For this bright and flavorful prawn infused recipe we partnered with Lauren (@foodworthcelebrating) who created something that anyone can make, whether it be for yourself or a lunch in with friends!
Ingredients
- 200g uncooked prawns, peeled
- 1/4 cup @picosauces Mango Chilli sauce
- 300g rice noodles, cooked
Dressing:
- 1 tbsp olive oil
- 1 tbsp Mango Chilli sauce
- 2 tbsp light soy sauce
- Juice from half a lime
Salad toppings:
- Carrot, about 3 inches, sliced finely
- Cucumber, about 3 inches, sliced finely
- 1/2 mango, sliced
- Handful coriander leaves
- 1 spring onion, sliced finely
Method
- Marinate the prawns in the Mango Chilli sauce and set aside
- Prepare the rice noodles, dressing and salad toppings
- Fry the prawns for 2-3 minutes on each side in some olive oil until firm
- To make the salad, add a base of rice noodles, top with the salad toppings and prawns and pour over the dressing
